Expert Tips

  • Don’t Microwave it Too Long: Don’t microwave this queso for more than 15 seconds at a time and for more than 30 seconds total. If you microwave it too long, the queso will start to separate.
  • Mix the Queso: Carefully remove the queso from the microwave after 15 seconds and mix. Then, microwave once more for 15 seconds and thoroughly mix once done. Mixing helps the cheese continue to melt and evenly distributes it.
  • Use a Microwave-Safe Container: Transfer the queso to a microwave-safe container before microwaving it.
  • Thoroughly Blend the Cottage Cheese: Ensure the cottage cheese is thoroughly blended so there are no lumps in your queso.
  • Make More Queso: If you want more queso, double this recipe and place it in a larger microwave-safe container.

What To Serve with Cottage Cheese Queso

  • Additions: This queso is delicious on its own, but you can easily customize it with your favorite mix-ins. Try stirring in salsa, diced tomatoes, or Rotel for extra flavor and texture. For a little heat, add diced jalapeño or fire-roasted green chiles.
  • Tortilla Chips: Serve this queso with your favorite tortilla chips. We love blue corn tortilla chips.
  • Vegetables: Enjoy it with fresh veggies. Sliced bell peppers, cucumber, celery, carrots, or carrot chips are great options.
  • Nachos: Make nachos with your favorite tortilla chips and add this queso. You could even add some cooked rotisserie chicken or slow cooker shredded chicken to your nachos for more protein.
  • Crackers: Serve this queso dip with your favorite crackers.
  • Tacos: Add some of this cheese sauce to tacos or burrito bowls. We love adding it to our sheet pan tacos and slow cooker chicken tacos.

Storage Instructions

Once heated, you can store leftover queso for later but don’t reheat it for more than 15 seconds, or it will start to separate. Or, you can serve it cold. We love having this queso already blended and stored in an airtight container in the refrigerator. Enjoy it within two days.
