These bagels are high in protein and super easy to make with a few simple ingredients. You can’t taste the cottage cheese, it just gives these bagels the ultimate fluffy texture.   • Flour: Use all-purpose flour and add the baking powder and salt to make self-rising flour. Or, use self-rising flour if you have it on hand.
  • Baking Powder: Add baking powder to the flour so the bagels rise.
  • Salt: Add salt to the flour mix to make self-rising flour.
  • Cottage Cheese: You can use fat-free, low-fat, or full-fat cottage cheese. There is no need to strain or blend it!
  • Egg: Whisk an egg for the egg wash.
  • Seasoning: Sprinkle with everything bagel seasoning.

Substitutions & Variations

  • Self-Rising Flour: If you already have pre-made self-rising flour, you can use that instead of making your own for this recipe.
  • Bagel Seasoning: To make everything bagels, sprinkle with everything bagel seasoning after brushing with egg wash. Or, sprinkle your bagel seasonings of choice. For plain bagels, omit any seasoning.
  • Make More Bagels: You can easily double this recipe to make more bagels for meal prep! However, one egg is still enough for the egg wash, you won’t need two.
  • Flour To Use: We used all-purpose flour. You could also use whole wheat flour or a 1:1 gluten-free flour blend.

How To Make Cottage Cheese Bagels

Step 1: Add the flour, baking powder, and salt to a large mixing bowl.

Step 2: Add the cottage cheese to the bowl with the flour mixture. Mix in the cottage cheese and then use your hands to knead the dough.

After that, roll each piece into a ball. From there, form it into the shape of a bagel and poke a hole in the center of each.

Step 4: Place the formed bagels on a baking sheet lined with parchment paper.

Step 5: Crack the egg in a bowl and whisk it. Then, brush the egg wash over all the bagels. Next, sprinkle everything bagel seasoning on top of the bagels.

Step 6: Bake the bagels at 350°F for 25-28 minutes.

Step 7: Once done, remove them from the oven and let them cool for at least 15 minutes before slicing and serving them.

How To Air Fry Cottage Cheese Bagels

You can also air fry these cottage cheese bagels! Place a parchment paper liner in the air fryer basket or lightly spray it with oil.

Then, air fry the bagels at 300°F for 15-17 minutes, until golden brown and cooked through. After that, let the bagels cool for at least 15 minutes before serving.

    I love these homemade bagels. They’re really good and easy to make. The fact that they have a high protein content is great for those that don’t eat meat in their diet.
