Rather than just using eggs, we added cottage cheese for even more protein and creaminess. You can’t taste the cottage cheese in these egg bites, it just adds protein and gives them a wonderful fluffy texture. We have lightened up these egg bites by using fat-free cottage cheese. Also, we added tomatoes, Parmesan cheese, basil, and seasonings to them for a delicious flavor. With this recipe, you can easily prepare a batch of egg bites to enjoy for breakfast throughout the week!
Ingredients Needed

- Eggs: Use four large eggs for this recipe. Use the whole eggs, not just the egg whites.
- Cottage Cheese: Use fat-free, low-fat, or full-fat cottage cheese.
- Tomatoes: Dice and seed one small Roma tomato.
- Parmesan: Freshly grate the Parmesan cheese. It adds a delicious cheesy flavor to these egg bites!
- Basil: Chop 3-4 fresh basil leaves. The basil adds another flavor to these egg bites.
- Onion Powder: The onion powder adds flavor without having to sauté diced onion.

How To Make Cottage Cheese Egg Bites
Step 1: Crack all the eggs into a large bowl. Then, whisk them.

Step 2: Add the cottage cheese, diced and seeded tomato, freshly grated Parmesan cheese, chopped fresh basil, onion powder, garlic powder, salt, and pepper to the bowl with the egg mixture.

Step 3: Spray a silicone non-stick muffin pan with olive oil. Then, pour the mixture into the muffin pan.

Step 4: Bake the egg bites at 350°F for 22-26 minutes or until fully cooked. Once cooked, let them cool for about 5-10 minutes before removing them from the pan and serving.

- Use A Non-Stick Muffin Pan: Make sure to use a non-stick silicone muffin pan and spray it lightly with olive oil or your favorite cooking spray so the egg bites don’t stick to the pan. If you don’t have a non-stick muffin pan, insert silicone muffin cups in a muffin tin and then spray the muffin cups with oil.

Then, store them in the refrigerator for 3-4 days. We don’t recommend storing them in the freezer because the texture of cottage cheese changes once frozen, which may alter the texture of the egg bites.
To Reheat: When ready to serve them again, reheat them in the microwave for 15-30 seconds, in the oven at 350°F for about 10 minutes, or in the air fryer for 1-2 minutes.
