This cottage cheese egg bake is similar to a traditional egg bake, with the addition of cottage cheese. The cottage cheese adds additional protein and volume to the egg bake, and is not to be missed! This recipe is similar to a quiche and frittata. It is often also referred to as a breakfast casserole or egg casserole. It’s made with simple ingredients such as cottage cheese, whisked eggs, green onions, cheddar cheese, salt, and pepper. Also, you can customize it with your favorite add-ins. It’s the perfect easy breakfast recipe with very minimal prep work!

As is, there is no need to sauté anything, which keeps it super simple. However, this egg bake is incredibly customizable and there are so many delicious add-ins. If you want, add 1/4 to 1/2 cup of one of these add-ins to your egg bake. Here are some great add-in options:

  • Chopped bacon
  • Cooked chopped Italian or chicken sausage
  • Chopped cooked ham
  • Diced tomatoes
  • Chopped fresh spinach or drained frozen spinach
  • Sautéed sliced mushrooms
  • Diced bell peppers

After baking this egg bake, let it sit in the baking dish for about 20-30 minutes before slicing and serving it. When ready to slice it, cut it into four even-sized pieces.   • 1/2 cup Trader Joe's Mexican light cheese blend or light shredded cheddar cheese

    I want to make this, but it is just for the two of us, would the leftovers also freeze well?

    I love cottage cheese and casserole!
    My variation of your recipe is I use the 9 x 13 pan lined with parchment paper then I add broccoli cauliflower onions, pepper season with Mrs. Dash extra spicy and then dollop cottage cheese on top . Sprinkle lots of cheddar cheese on top of all. So yummy and filling!
