  • 8 large eggs
  • 16 ounces cottage cheese, fat-free, low-fat, or full-fat
  • 1/3 cup sliced green onions, green parts only
  • 1/2 cup Trader Joe's Mexican light cheese blend or light shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

    I love cottage cheese and casserole!
    My variation of your recipe is I use the 9 x 13 pan lined with parchment paper then I add broccoli cauliflower onions, pepper season with Mrs. Dash extra spicy and then dollop cottage cheese on top . Sprinkle lots of cheddar cheese on top of all. So yummy and filling!

    I want to make this, but it is just for the two of us, would the leftovers also freeze well?
