Also, it is easy to make and you only need 4 simple ingredients.

We made this frozen bark with cottage cheese because cottage cheese has a mild flavor and is creamy. We like this cottage cheese bark even more than yogurt bark! The cottage cheese is blended with the strawberries for the perfect consistency and delicious taste. Even if you don’t like cottage cheese, you will love this because all you will taste is the amazing flavors of strawberries and chocolate.

What Is Frozen Cottage Cheese Bark?

Cottage cheese bark is a frozen cottage cheese dessert. It is similar to frozen yogurt bark, but it is made with cottage cheese and is less tart than yogurt bark. We blended the cottage cheese with strawberries which makes it delicious, creamy, and smooth.

What Does Cottage Cheese Bark Taste Like?

This frozen cottage cheese bark has the flavors of chocolate-covered strawberries. This bark is packed with strawberry flavor and we drizzled chocolate on top along with more fresh strawberries. It is a delicious treat with the flavors of strawberry and chocolate in every bite.

  • Cottage Cheese: Cottage cheese is essential for frozen cottage cheese bark.
  • Strawberries: Blend the strawberries with the cottage cheese and save some to slice and add to the top of the bark.
  • Sweetener: Use your sweetener of choice in this recipe or a 1:1 sugar-free sweetener.
  • Mini Chocolate Chips: Melt chocolate or sprinkle mini chocolate chips on top for a burst of chocolate flavor.

What Cottage Cheese To Use?

Make sure to use high-quality cottage cheese. We used fat-free cottage cheese in this recipe but low-fat or full-fat will also work. Also, make sure the cottage cheese you use isn’t too salty.

What Chocolate Chips To Use?

You can melt chocolate for this recipe or add mini chocolate chips on top. To keep this cottage cheese bark sugar-free, you can use 30-40 grams of Lily’s dark chocolate sugar-free baking chips.

Can I Make Cottage Cheese Bark With Frozen Strawberries?

Yes, you can make cottage cheese bark with frozen strawberries. However, I find that it will most likely need the 2 tablespoons of sweetener as frozen strawberries are usually not as sweet as fresh strawberries. You can sweeten it to taste and see according to your preference and strawberries. Also, you can reserve a few of the frozen strawberries for the top if you would like. Just let a few frozen strawberries defrost so they are easy to slice.

Otherwise, follow the normal directions and there is no need to thaw the frozen strawberries, just blend them with the cottage cheese. Just make sure to use a food processor or a high-powered blender that can thoroughly mix the strawberries with the cottage cheese. Also, you could blend frozen strawberries with the cottage cheese and slice a few fresh strawberries for the top of the bark.

How To Make Frozen Cottage Cheese Bark

First, wash and dry the strawberries. Then, thinly slice them. I like to use the center cuts of the strawberry for the top of the bark. Next, add the rest of the strawberries to a high-powered blender or food processor with the cottage cheese and your sweetener of choice.

After that, thoroughly blend the cottage cheese, strawberries, and your sweetener of choice.

Then, spread the cottage cheese bark mixture on a sheet pan with parchment paper.

Next, melt the chocolate in the microwave or use the double boiler method. Once the chocolate is melted, place dollops of chocolate on the bark. Use a knife or a spoon to swirl the chocolate.

Then, add the slices of strawberries on top of the bark.

After that, place the cottage cheese bark in the freezer on a sheet pan until firm and frozen.

Once frozen, break the cottage cheese bark into pieces and enjoy!

Cottage Cheese Bark Variations

Melt Chocolate
  • You can melt chocolate chips or part of a chocolate bar in the microwave or use the double boiler method. Then, swirl the chocolate on top of the bark.
  • If you don’t want to melt chocolate, you can sprinkle mini chocolate chips on the bark with the sliced strawberries.
  • You can even roughly chop about 30-40 grams of chocolate or baking chips and sprinkle the chopped chocolate on top of the bark before adding the sliced strawberries.

How To Melt Chocolate

Double Boiler Method

To melt chocolate using the double boiler method, fill a saucepan with 1-2 inches of water. Then, place the saucepan on the stove over medium heat. Once the water is boiling, add a large heat-resistant bowl over the saucepan and reduce the heat to a simmer. After that, add your chocolate to the bowl. It is best to slice your chocolate into small pieces before adding it to the saucepan so it is easier to melt. Use a spatula to mix the chocolate in the bowl the entire time.

When there are a few chunks of chocolate left, carefully remove the bowl from the saucepan and continue to mix the chocolate off of the heat until it is fully melted. Make sure no water gets in the chocolate or it will seize up. Next, add dollops of melted chocolate on top of the bark and swirl it with a knife or spoon.

Microwave Method

To melt chocolate in the microwave, add it to a microwave-safe bowl. Then, microwave the chocolate for 30 seconds. After that, remove the bowl from the microwave and mix the chocolate. Then, microwave the chocolate for 15 seconds, carefully remove it, and mix. Keep melting and mixing the chocolate in 15-second intervals until it is almost all melted. At this point, don’t microwave it anymore and keep mixing until it is fully melted. Then, swirl the melted chocolate on top of the bark.

Tips For Making Frozen Cottage Cheese Bark

Spread The Bark Into An Even Layer

Make sure to evenly spread the cottage cheese bark about 1/4 inch thick on the parchment paper lined sheet pan so it freezes at the same rate and so the bark is easy to bite into.

Thinly Slice The Strawberries

Make sure to thinly slice the fresh strawberries for the top of the bark.

Don’t Use Salty Cottage Cheese

Check the cottage cheese you use to make sure there isn’t a lot of added salt. You don’t want your cottage cheese bark to be salty.

How To Store Cottage Cheese Bark

Store leftover cottage cheese bark in the freezer in a stasher bag or freezer-safe bag for 2-3 weeks.

Ingredients 

  • 1 cup fat-free cottage cheese
  • 1 cup fresh chopped strawberries, reserve 4-5 strawberries and thinly slice them for the top
  • 1-2 tablespoons sweetener of choice, depending on the sweetness of the strawberries
  • 2 tablespoons mini chocolate chips

Instructions 

  • Wash and dry the strawberries. Take your reserved strawberries and thinly slice them, about 1/4 inch slices down the strawberry. I like to use the center cuts of the strawberry for the top of the bark and use the rest of the strawberries to blend with the cottage cheese. Once you have about 8-12 slices of strawberries from the 4-5 strawberries, use those for the top of the bark then cut the stems off, and add the rest of the strawberries to a high-powered blender or food processor with the cottage cheese and your sweetener of choice.
  • Thoroughly blend the cottage cheese, strawberries, and your sweetener of choice.
  • Evenly spread the cottage cheese bark mixture on a sheet pan with parchment paper, making the bark about 1/4 inch thick.
  • Melt the chocolate in the microwave or use the double boiler method. Once the chocolate is melted, place dollops of chocolate on the bark. Then, use a knife or a spoon to swirl the chocolate evenly. If you don’t want to melt chocolate, just sprinkle the mini chocolate chips on top of the bark. Also, add the slices of strawberries on top of the bark.
  • Place the cottage cheese bark in the freezer on a sheet pan for 3-4 hours or until firm and frozen. Also, make sure nothing is covering the bark in the freezer. Once frozen, break the cottage cheese bark into six pieces and enjoy!
