  • Milk: We used a small amount of almond milk to soften the dough. Feel free to use your milk or choice.
  • Vanilla Extract: To add flavor to the cookie dough.
  • Egg: One egg in this recipe helps the dough come together. We recommend using a room-temperature egg.

Why Use A Room Temperature Egg?

It is best to use a room-temperature egg when making these cookies. This is because at room temperature you can mix the egg with the butter and wet ingredients easily.

Use Softened Butter

You will need softened butter for this recipe. Just measure your butter and let it soften at room temperature. Make sure not to melt the butter. Softened butter is much easier to combine with the sugar and wet ingredients.

How To Measure The Ingredients

We recommend using a scale to measure ingredients when baking. A scale makes it so much easier to measure and you don’t need measuring cups, which can be inaccurate for baking. Using a scale helps ensure that you are using the correct amount of each ingredient and that the cookies will turn out. Ingredients

  • 1 ½ CUP all-purpose flour, which is 180 grams

  • 1 TSP baking powder

  • 1 TSP cinnamon

  • 1/4 TSP salt

  • 2 TBSP unsalted softened butter, which is 28.4 grams

  • 1/2 CUP sugar or monk fruit

  • 1 TBSP almond milk or milk of choice

  • 1 ½ TSP vanilla extract

  • 1 egg

  • 3 TBSP sugar or monk fruit for rolling

Directions

  • Thoroughly mix the flour, baking powder, cinnamon, and salt in a large bowl.
  • Add the unsalted softened butter and sugar to a separate large bowl. Use a hand mixer or stand mixer on a low speed to combine the butter and sugar. Then, add the almond milk, vanilla extract, and egg. Combine these ingredients with your mixer.
  • Once the wet ingredients are combined, add the dry ingredients to the bowl a little at a time. Continue to use your mixer on a low speed to thoroughly combine all of the wet and dry ingredients.
  • Make sure all of the ingredients are thoroughly combined. Then, transfer the cookie dough to a bowl. Cover the bowl with plastic wrap and chill the dough in the refrigerator for 1-3 hours.
  • Once the dough has chilled, remove the plastic wrap. Then, use a 1-tablespoon cookie scoop and roll the dough into balls with your hands. With the batter, make 18-22 cookies. Fill a bowl with 3 tablespoons of sugar or monk fruit. Then, roll each ball of cookie dough in the sugar or monk fruit.
  • Add the cookie dough balls to a sheet pan with parchment paper. There is no need to press the cookies down. Bake the cookies at 350 degrees F for 10-12 minutes. Once cooked, let them slightly cool and enjoy!
