Thank you for this great recipe! I just discovered your site looking for a banana cottage cheese low WW point recipe. My husband and I lost 50 lbs each earlier this year on WW and are having fun maintaining our goal weight and healthier lifestyle. I made a few minor changes to this recipe to make mini muffins that came out as 3 muffins for 1 point. I substituted King Arthur’s white whole wheat for 1 cup of the flour (next time I want to also try Kodiak protein mix for the rest of the all purpose flour) I used the fat free cottage drained and processed smooth, 1/4 cup Truvia brown and 1/2 cup monk fruit for the sugar, and added 1/4 cup Toasted walnuts. This worked great in both silicone mini muffin pans and sprayed regular mini muffin pans. . they were still very light and moist 😊
