This coffee cake is healthier than most coffee cakes. We used simple ingredients such as flour, eggs, sweetener, 0-fat Greek yogurt, and milk. There is only a small amount of light butter that is used for the streusel crumble topping. Also, there is no butter or oil required to make the cake.

How To Make Healthy Coffee Cake
First, add the flour, cinnamon, baking powder, baking soda, and salt to a large bowl. Then, mix these dry ingredients.

After that, in a separate bowl, whisk together the 0-fat Greek yogurt, milk, and vanilla extract until the yogurt is smooth and there are no lumps.


Then, whisk in the eggs and sugar or sugar-free sweetener.


Next, combine the wet and dry ingredients, making sure not to over-mix.
Then, make the streusel crumb topping. Mix the flour, brown sugar, cinnamon, and salt. After that, incorporate the light butter and use your hands or a fork to break up the butter.


Do this until the crumb topping has a crumbly consistency.

After that, lightly spray a nonstick loaf pan with oil or you can use parchment paper. Then, pour half of the batter into the loaf pan. Next, sprinkle a thin layer of the crumb mixture over the top of the batter.

Then, pour the rest of the batter on top.

After that, top the cake with the remaining streusel crumb topping.

Next, bake the coffee cake, let it cool, carefully remove it from the pan, slice it, and enjoy!
Tips For Making Coffee Cake
- If your coffee cake batter is too thick, add up to 1/2 cup of milk total, adding a little at a time until able to mix.
- Make sure not to over-mix the batter, you don’t want your coffee cake to be dense.
- Use a toothpick to make sure your coffee cake is cooked through. You don’t want it to over-bake it but you don’t want it undercooked. If it overcooks it may become dry.
- Once cooled, carefully remove this coffee cake from the loaf pan and slice it into 8 even pieces.

To Store: This coffee cake will last 1-2 days if stored in an airtight container at room temperature on the counter. Or, it can be stored in an airtight container in the refrigerator for 3-5 days.
To Freeze: You can freeze this coffee cake! It will last 1-2 months in the freezer if stored in an airtight freezer-safe container. We like to use stasher bags.
To Reheat: We love reheating leftover coffee cake before enjoying it again to lightly warm it up.

HEALTHY COFFEE CAKE

Ingredients
For The Coffee Cake:
- 1 ¾ cups all-purpose flour
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup 0-fat Greek yogurt
- 1-3 tablespoons milk of choice, add up to 1/4 cup as needed for consistency, or up to 1/2 cup if using a sugar substitute
- 2 teaspoons vanilla extract
- 2 large eggs
- 3/4 cup sugar or 1:1 sugar substitute such as monk fruit
For The Streusel Crumb Topping:
- 1/3 cup all-purpose flour
- 1/3 cup brown sugar or 1:1 sugar substitute such as brown monk fruit
- 1 teaspoon cinnamon
- 1 pinch of salt
- 3 tablespoons light butter, we used Land O Lakes light butter
Instructions
- Add the flour, cinnamon, baking powder, baking soda, and salt to a large bowl. Thoroughly mix these dry ingredients.
- In a separate large bowl, whisk together the 0-fat Greek yogurt, milk, and vanilla extract until the yogurt is smooth and there are no lumps. Then, whisk in the eggs and sugar or sugar-free sweetener. *Add up to 1/4 cup of milk as needed for consistency, or up to 1/2 cup if using a sugar substitute. The batter should be thick but spreadable, not stiff.
- Add the wet ingredients to the bowl with the dry ingredients a little at a time until fully combined. Make sure not to overmix the batter.
- To make the streusel crumb topping, mix the flour, brown sugar, cinnamon, and salt. Then, incorporate the light butter and use your hands or a fork to combine everything and break up the butter. Do this until the crumb topping comes together and has a crumbly consistency.
- Lightly spray a nonstick loaf pan with oil or you can use parchment paper. We used a 9×5 loaf pan. Pour half of the batter into the loaf pan. Sprinkle a thin layer of the crumb mixture over the top of the batter, and save the rest for the top of the cake. Then, pour the rest of the batter on top. Top the cake with the remaining streusel crumb topping.
- Bake the coffee cake at 350℉ for 37-40 minutes. You will know it is done when a toothpick comes out clean from the center. Let the coffee cake slightly cool, carefully remove it from the pan, slice it into 8 pieces, and enjoy!

I really enjoyed the flavor of this coffee cake but my cake turned out extremely dry/dense. I followed the recipe and made sure not to over mix. I used regular white sugar in the batter and 1 tbsp almond milk, and followed the rest of the ingredients to the T for the cake part. Do you have any suggestions how to fix this? I don’t know if it needs more liquid or oil or something. I noticed it says you may need up to 1/2 cup milk if a sugar substitute is used, but I only used 1 tbsp almond milk since I used regular white sugar. The crumb however, is delicious. I used brown sugar in that.
