The oat topping for this blueberry crisp is made with quick oats. We used quick oats since they are smaller than rolled oats and because they will cook faster for this individual blueberry crisp. Also, the crisp is not in the oven as long as a larger crisp would be so the quick oats have time to bake perfectly.
What If I Don’t Have Quick Oats?
We recommend using quick oats in this recipe because it gives you the perfect crispy oat topping. If you don’t have quick oats you can quickly pulse rolled oats in a food processor so they are slightly finer. If you do this, make sure not to turn the oats into oat flour.
Why Add Lemon Juice?

What Butter To Use?
You will need one tablespoon of butter for this recipe. We used Land O Lakes Light Butter.
How To Make Blueberry Crisp

After that, pour the blueberry mixture into an oven-safe baking dish.

HEALTHY BLUEBERRY CRISP RECIPE

Ingredients
For The Blueberries
- 1 ⅓ cups fresh blueberries or frozen blueberries
- 2 teaspoons sweetener of choice
- 1/2 teaspoon cornstarch
- 1/8 teaspoon fresh lemon juice
- 1/8 teaspoon vanilla extract
- 1 pinch of salt
For The Oat Topping
- 1/3 cup quick oats
- 1 teaspoon flour
- 1 teaspoon sweetener of choice
- 1 pinch of cinnamon
- 1 pinch of salt
- 1 tablespoon melted light butter, we used Land O Lakes light butter
Instructions
- Add the blueberries, sweetener, cornstarch, lemon juice, vanilla extract, and a pinch of salt to a bowl. Mix these ingredients. Then, pour the blueberry mixture into an oven-safe baking dish. Make sure it has room on top because it bubbles up a lot when cooking.
- In another bowl, mix the quick oats, flour, sweetener, cinnamon, and salt. Once mixed, add the melted light butter to the bowl and thoroughly combine. After that, add the oat mixture to the top of the blueberries in the baking dish.
- Place the oven-safe baking dish on a sheet pan and place it in the oven. Bake the blueberry crisp at 375℉ for 25-30 minutes. Once done, carefully remove it from the oven, let the baking dish cool off, and enjoy it warm!
