We have taken all of the delicious flavors of strawberry shortcake and made strawberry shortcake overnight oats! These overnight oats are easy to prepare and have the flavors of fresh strawberries throughout.

These overnight oats are so amazing because the rolled oats absorb the milk and juices from the mashed strawberries. It tastes like you are having a decadent strawberry dessert! This is the perfect breakfast to meal prep for the week.

Combine all of the ingredients and let the overnight oats sit in the refrigerator overnight. That will give the oats time to absorb the milk. How To Make Strawberry Shortcake Overnight Oats

First, wash, dry, and chop the strawberries.

After that, add the chopped strawberries, vanilla extract, lemon juice, and sweetener of choice to a large bowl. Then, lightly mash the strawberries to release some of the juices.

Next, add the rolled oats, chia seeds, milk of choice, and mashed strawberry mixture to a jar. After that, mix the ingredients.

Then, put the lid on the jar and place the overnight oats in the refrigerator. Let them sit overnight and lightly mix before enjoying.

Ingredients

  • 1/3 CUP rolled oats

  • 3 TBSP unsweetened almond milk or milk of choice

  • 1/2 CUP chopped strawberries

  • 1/2 TSP vanilla extract

  • 1/8 TSP lemon juice

  • 2 TSP sweetener of choice

  • 1 TSP chia seeds

Directions

  • Wash and dry the strawberries. Then, chop them into small pieces.
  • Add the chopped strawberries, vanilla extract, lemon juice, and sweetener of choice to a large bowl. Use a potato masher or fork to lightly mash the strawberries. This is so the oats can absorb some of the strawberry juices.
  • Add the rolled oats, chia seeds, milk of choice, and mashed strawberry mixture to a jar. Mix all of the ingredients.
  • Put the lid on the jar and place the overnight oats in the refrigerator overnight.
  • Lightly mix the ingredients before eating, add your favorite toppings, and enjoy! We love adding some more chopped strawberries and whipped cream topping.
