How To Make Ground Turkey Enchilada Skillet

  1. Lightly spray a large nonstick skillet or pan with olive oil. After that, add the diced onion and crushed garlic, and sauté them. Then, move them to one side of the skillet.

  1. Add the ground turkey breast to the skillet. Season both sides with cumin, salt, and pepper. Cook the turkey over medium heat and use a spatula to break it up into small pieces.

  1. Once the ground turkey is fully cooked, add the enchilada sauce, chopped chipotle peppers in adobo sauce, rinsed and drained black beans, and frozen corn to the skillet. Next, mix to combine all the ingredients. Then, let everything simmer for 5-10 minutes.

  1. In the last few minutes, sprinkle shredded cheese over the top and place the lid on the pan so it melts. Once done, serve and top with chopped fresh cilantro and sliced green onions.

Ingredients 

  • 1 pound ground turkey breast
  • 1/2 cup diced white or sweet onion
  • 1 garlic clove, crushed
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 16 ounces enchilada sauce
  • 1 tablespoon chipotle peppers in adobo sauce, chopped
  • 15 ounce can of black beans, rinsed and drained
  • 1 cup frozen corn
  • 1/3 cup Mexican light cheese or light cheddar
  • 1 bunch of cilantro, chopped
  • 3-4 green onions, sliced

    We enjoyed this so much . I made homemade enchilada sauce so that there would be less sodium in the dish .
    Question : Since I only used 1 tablespoon of the chopotle peppers can I freeze the rest for future recipes ?

Yes, you can absolutely freeze the remaining chipotle peppers. Portion them into an ice cube tray in individual tablespoon amounts and freeze. Then, store the frozen cubes in a freezer-safe bag or container. It makes it so easy to use just what you need for future recipes.

    I made the Ground Turkey Enchilada Skillet a few days ago and it was delicious. So far I have enjoyed every recipe I have made from #healthyfoodiegirl. I thought I had some fat free Cheddar Cheese in the fridge but, I did not. So I topped it with On the Boarder Queso it was delicious and added a little spice to the mix. Give this one a try it will not disappoint. And by the way the portion sizes are very generous.

    Any suggestions instead of ground chicken or turkey, we do not eat cheese and meat together. Could lentils or tofu be used

      Hi Eileen, yes, you can definitely swap out the ground turkey. An extra can of black beans works great, or you can use one can of black beans and one can of pinto beans together for a delicious combo, we do this all the time when we’re craving this dish but don’t have ground turkey! Cooked lentils are another good option, though the beans will give it a more authentic flavor. You could also sear some tofu or tempeh for added texture.     I used some 90/10 ground beef we had in the freezer. I bought smoked paprika and a cilantro/lime dry seasoning to use since I wasn’t sure how hot Adobe peppers would be. We loved the skillet with light corn tortillas for a Sunday night fun meal!

      Hi Susan, I am so glad you enjoyed the skillet! I am glad you were able to make delicious substitutions. We are huge fans of chipotle peppers in adobo sauce over here. It has a nice rich, smoky flavor and is mild in heat as long as you chop them and only use one tablespoon. The cilantro lime seasoning that you used sounds delicious, as well!
