However, if you have any leftovers, you can store them in an airtight container in the refrigerator for a few days. You can reheat them in the oven in an oven-safe dish or air fry them again for a few minutes. We love adding any leftovers to breakfast burritos.

Ingredients

  • 1 lb red potatoes or baby red potatoes

  • 1 TSP olive oil

  • 1 TSP fresh chopped rosemary

  • 1/2 TSP salt

  • 1/4 TSP pepper

  • 1/2 TSP garlic powder

  • 1/2 TSP onion powder

  • Wash and dry the red potatoes. There is no need to peel them.
  • Cut the potatoes into small bite-sized pieces, about 1/2 inch in width. Evenly chop them so they cook in the same amount of time. Also, make sure to chop them small enough so that they will cook through in the air fryer.
  • Add the chopped potatoes to a bowl. Then, add the olive oil, chopped fresh rosemary, salt, pepper, garlic powder, and onion powder to the bowl with the potatoes. Thoroughly mix everything.
  • Add the potatoes to the air fryer. You don’t want to overcrowd the air fryer, so you may need to cook the potatoes in batches.
  • Air fry the red potatoes for 10-14 minutes, or until cooked through, at 400 degrees F. There is no need to preheat your air fryer. Shake the potatoes 2-3 times while they cook so they cook evenly and don’t stick. They will start to stick, so make sure to shake them to move them around in the basket. You want them to be crispy all around, not just on one side.
  • Once air fried, place the potatoes on a plate and enjoy!
